OK everyone, this is old school...think British Raj, or Honkers circa 1900....The Steep Verandah!

  1. Boil 3 cups of water and add 1-2 teaspoons of the best green tea you can get your hands on. Steep for 3 minutes. Strain.
  2. Add a 2" piece of peeled ginger, sliced finely.
  3. Add a couple of wide orange zest peels, half cup of sugar, and half cup of fresh mint.
  4. Return to a saucepan and simmer over medium heat, stirring occasionally to dissolve sugar. Let cool. Strain. Discard solids.
  5. Stir in 1 cup of great dry Australian craft gin from The Gin Boutique and add half cup of fresh lemon juice. Chill.

Serve on ice, with a wheel of lemon and a mint sprig. Perfect for as good start to the day!
